Greek Pork Pitas

  • 2-3 pounds pork loin roast
  • 2-3 Tablespoons Cavendar’s Greek Seasoning
  • 1 container grape tomatoes, chopped
  • ½ cup chopped fresh parsley
  • 1 cup feta cheese, crumbles
  • Whole wheat pita pockets (1 package)

For the tzatziki sauce:

  • 2 containers (5.3 oz) plain, non-fat Greek yogurt
  • 1 small cucumber, peeled and diced
  • 1 Tbsp. dill
  • 1-2 tsp. chopped garlic
  • ½ tsp. salt

1. Rub pork roast with Cavendar’s Greek Seasoning. Place in large baking dish and cover with foil. Cook in a 300 degree oven for 2-3 hours or until done. OR place roast in slow-cooker; cook on high for 6-8 hours or on low for 8-10 hours.

2. In a medium bowl, mix together all ingredients for tzatziki sauce. Refrigerate until ready to eat.

3. Remove roast from oven or slow-cooker; shred or chop.

4. On one pita pocket, layer pork, about 1-2 tablespoons tzatziki sauce, top with some tomatoes, parsley and feta. Repeat with each pita. Serve.
